Green beans are in like crazy! Make sure to pick while young and tender.
The easiest way to fix them to preserve their fresh "beaniness" is to wash, snip the ends and blanch in boiling salted water for 2-3 minutes. Rinse in cold water and drain. Film a cast iron skillet with olive oil, mince a large clove of garlic and add the garlic and beans to the skillet when hot. Saute, stirring frequently until the beans are slightly charred. Serve warm or at room temperature.
