In my kitchen today: Carrots!
I’ve had a struggle growing carrots due to poor soil, but have finally mastered it. I just harvested this morning since freezing temperatures seem imminent. I could certainly leave them in the ground, but my garden is a good distance from the house, and trudging through the snow to dig them from under straw is not high on my list of favorites. I didn’t grow all that many anyway, and we’ll have eaten most of them in a month. And, they store well in the frig.
Carrots are sweet and delicious fresh and raw just out of the frig, but they turn into delicacies when roasted or used as a base for salad dressing or a souffle. Check the recipe tab to the left for carrot recipes
