In my garden today: last of the beets
It’s Thanksgiving week and I dug the last of my beets this morning. I didn’t plant enough this year to store for winter, so these last jewels of the garden will be celebrated at our Thanksgiving dinner. Beets can certainly be stored in the refrigerator or in the ground over winter (covered with a bale of straw) if you plant enough, and they are exceedingly sweet the following spring. Because it’s late in the season, these don’t have a lot of greens still intact, but what is there has been kissed by frost and turned red. I’ll cook these along with some green Swiss chard (just a non-bulbing beet), and it should be a beautiful side dish. See the recipe tab at the left for a recipe.
