A bisque is a creamy vegetable-based soup that can be served hot or cold. It is not especially thick but is thicker than a strictly stock-based soup because it has cream or milk added. You can make bisque out of any vegetable or any combination of vegetables and can make it as thick as you want. See the recipe tabs at the left for a recipe.
