Roasting Vegetables

Roasting vegetables - almost any vegetable goes from delicious to sublime when roasted. Tougher vegetables like broccoli and cauliflower benefit from blanching briefly first. Then splash with olive oil and roast about 25 minutes at 375. Salt immediately when they come out of the oven and serve immediately or at room temperature. Roasted broccolini is a bit of heaven.
