My kitchen today: gazpacho
It doesn't get any fresher! Gazpacho is a cold soup that is made up of pureed raw vegetables. It can take on any form and I suggest you play with the ingredients.White gazpacho is made without tomatoes and with sour cream or yogurt added to make it creamy. Drink as a smoothie in the morning, serve in a bread bowl for lunch or as a first course for dinner. Vary the seasonings to your taste (try to find smoked cumin - it is a miracle flavor!). You can also boost the heat with more chilis, and a drizzle of basil oil is divine. Add fresh chopped tomatoes, cucumbers, green onions and/or seasoned croutons.
