Preheat oven to 375 degrees. Wash small carrots (homegrown or bagged baby carrots from the grocery) and dry well by rubbing with clean dish towel. Toss with olive oil and salt and spread in single layer in roasting pan with sides. Roast for about 25 minutes, rolling them around every 5 minutes or so. Squeeze some lemon juice and adjust the salt. Serve warm or at room temperature.
