Broccoli Bisque

Creamy Vegetable Soup

1 T. butter

¼ cup chopped onion

1 clove garlic, minced

Vegetables of choice (2 c. fresh peas, chopped carrots, tomatoes or any combination

4 c. broth (chicken or vegetable)

½ c. half-and-half

Salt and pepper to taste

Melt butter in large saucepan. Add onions and garlic and saute until tender. Add vegetables and saute until tender. Add broth and simmer 15 minutes. Remove from heat and puree with hand blender. Stir in half and half and season to taste. Pour into bowls and garnish with garlic croutons
