Use up that giant zucchini with Zucchini Oatmeal Bread!

3 eggs

1 ½ c. sugar

1 c. vegetable oil

1 T. vanilla

1 c. quick oatmeal

2 c. flour (combination of white wheat and white flour)

1 t. cinnamon

1 t. baking soda

½ t. salt

½ t. baking powder

2 c. unpeeled, raw, grated zucchini

1 c. chopped pecans

Beat together eggs and sugar. Add salad oil and vanilla. Mix oatmeal, flour, cinnamon, baking soda, salt, and baking powder together. Pour into sugar mixture and mix thoroughly. Add zucchini, pecans, and raisins. Pour into two greased and floured 4 by 8 inch loaf pans. Bake at 350F for 1 hour.
