Magic happens when you roast vegetables. Cauliflower is no exception.

1 small head cauliflower, cut into florets

olive oil

1/2 c. panko bread crumbs

1/4 c. grated parmesan cheese

salt and pepper

Place cauliflower in roasting pan and drizzle with olive oil. Roast at 375 until almost tender and beginning to brown. Meanwhile, mix panko, cheese and 1 teaspoon of olive oil in a small bowl. When the cauliflower is almost tender, sprinkle bread crumb mixture over it and roast another five to ten minutes, making sure it doesn’t brown too much. Salt and pepper to taste and serve hot or at room temperature.
