4 cups fresh baby spinach or chopped mature spinach

1/2 onion chopped

1 clove garlic minced

2 T. olive oil

2 T. butter

Heat the oil and melt the butter in a large skillet. Add the onion and saute 5 minutes or so until soft. Add garlic and spinach and toss in the oil mixture to coat. Continue stirring gently for about two minutes. Remove from heat and salt and pepper to taste.

For orzo dish, cook 1 c. orzo pasta according to package directions. When cooked, drain and toss with spinach mixture and chopped tomatoes. Top with fresh parmesan and enjoy! Use your imagination to add other ingredients like pine nuts, roasted peppers, sauteed mushrooms, etc.
